I was introduced to it at the first holiday spent at my in-law’s house. Mimi, my mother-in-law, was a very good cook and I got many of my culinary inspirations from her. One of my first was this Hawaiian coleslaw. When you first put it in your mouth close your eyes so you can concentrate on the remarkable and surprising flavor. The cool, sweet creaminess combined with the crunchiness of the fresh crispy cabbage, sets this coleslaw apart. The first words out of my mouth were, “What is in this, it is amazing!”

The Secret Ingredient
What makes this coleslaw so good? Pineapple! Yes, pineapple. That’s where the Hawaiian comes from. Whether you open a can of pineapple or use a fresh pineapple from your garden, this is one coleslaw you don’t want to miss. From the first day I tried this Hawaiian coleslaw, it has been our official salad for holiday meals. I tried a tossed salad one year for Christmas, just to have a bit of variety. My family informed me we could have the salad, but we had to have the coleslaw, too.

It’s a great addition to any meal year-round. It’s so quick to make and goes with almost anything. We love to make it in the summer when you don’t want to heat up the house by cooking vegetables. And Hawaiian coleslaw goes great with brats or ribs on the grill…..mmmmm!

The secret to a really good slaw is slicing the cabbage very thin. Just use a cutting board and a sharp knife, cut the cabbage in half, and slice from the middle out. That way, you can slice very thinly without getting all those outside hunks. I save all the big stuff for Cabbage and Kielbasa or Cabbage Soup. What a wonderful way to use the bounty from your own garden. I love to use cabbage when I cook. It is so versatile. You can use it fresh, roasted, grilled, or boiled. And all the Brassicaceae family (cabbage, broccoli, cauliflower, etc.) are so good for you.
So mix up some of this creamy goodness today, and start making your own family traditions.
